Organic Banana Bread Muffins
Banana bread is great, but with four kids in the house and Hubby wanting walnuts added while kids would not, muffins are the way to go for our family. This recipe is perfect for a grab-n-go breakfast for kids or a quick snack for Hubby!

- 3-4 Overripe Organic Bananas
- 1 cup Organic All-Purpose Flour
- 3/4 cup Organic Honey
- 1/3 cup Organic Grass-Fed Butter melted
- 1 Organic Egg beaten
- 1/2 tbsp Organic Vanilla Extract
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 1/3 cup Organic Cocoa Nibs optional
- 1/3 cup Organic Chopped Walnuts optional
Preheat the oven to 375℉ and add muffin wrappers to muffin tin. This recipe will make 12 muffins.
Using a fork, mash the overripe bananas in a medium sized bowl.
Add butter, honey, vanilla, and egg. Mix well.
In a small mixing bowl, whisk together flour, baking soda and salt until combined.
Add flour mixture to banana mixture and mix until just combined.
Fold in nibs and/or walnuts if using.
Spoon about 1/4 cup of the banana batter into each muffin well. Bake for 22 minutes or until toothpick/knife comes out clean.
