Instructions
To the bottom of a wide mouth mason jar, add your egg, lemon juice, salt and mustard.
Add the avocado oil on top of the other ingredients.
Place immersion blender in the bottom of the jar (you're only blending the egg, lemon, salt and mustard mixture right now). Blend for 45 seconds to 1 minute, until the bottom of the jar is white and creamy.
Move blender up into the avocado oil and blend to incorporate. This should take another 1-2 minutes.
Use immediately or store in the refrigerator for up to a week.
