Ingredients:

  • 3-4 Overripe Organic Bananas
  • 1 cup Organic All-Purpose Flour
  • 3/4 cup Organic Honey
  • 1/3 cup Organic Grass-Fed Butter, melted
  • 1 Organic Egg, beaten
  • 1/2 tbsp Organic Vanilla Extract
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/3 cup Organic Cocoa Nibs (optional)

Instructions:

  • Start by preheating your oven to 375℉ and placing muffin wrappers in a muffin tin. This recipe yields 12 mouthwatering muffins.
  • In a medium-sized bowl, mash the overripe bananas using a fork.
  • Add melted butter, honey, vanilla extract, and the beaten egg to the mashed bananas. Mix everything thoroughly.
  • In a separate small mixing bowl, whisk together the all-purpose flour, baking soda, and salt until well combined.
  • Combine the flour mixture with the banana mixture, stirring until just combined.
  • If you choose to add a little extra flair, fold in cocoa nibs and/or chopped walnuts to the batter.
  • Spoon approximately 1/4 cup of the banana batter into each muffin well in your prepared tin.
  • Bake for 22 minutes or until a toothpick or knife inserted into a muffin comes out clean.
