What you’ll need:

Deli Slicer

Ingredients:

For your homemade deli meat, you’ll need:

  • 1 lb Organic Boneless Skinless Chicken Breast (usually 2 breasts)
  • 1 1/2 tbsp Organic Honey (preferably local)
  • 1 1/2 tsp Salt
  • 2 tsp Seasonings of Your Choice (we recommend 2 tsp of Watkins Organic Garlic & Herb)

Instructions:

Marinate (2 Days, 10 Minutes)

  1. Start by combining the organic honey, salt, and your chosen seasonings. Mix these ingredients together until well blended.
  2. Coat the chicken breasts completely with the honey marinade, ensuring even coverage. Place the chicken in a covered bowl or a ziplock bag.
  3. Refrigerate the chicken for at least 48 hours to allow the flavors to meld.

Prepare (1 Hour)

  1. After marinating, remove the chicken from the refrigerator and rinse it thoroughly with cold water.
  2. In a separate bowl, place the chicken and fill it with cold water until the chicken is fully submerged. Allow the chicken to sit in the water for 1 hour.

Roast/Grill (45-50 Minutes)

  1. Preheat your oven or pellet grill to 250℉ (121℃).
  2. Remove the chicken from the water and pat it dry with paper towels. If you’d like to season the chicken a second time, you can do so now.
  3. Bake or grill the chicken for 45-50 minutes or until the internal temperature reaches 165℉ (74℃).
  4. After cooking, allow the chicken to rest at room temperature for at least 45 minutes before placing it in the refrigerator. It should chill for a minimum of 4 hours before slicing.

Storage

  1. Store your homemade deli meat in an airtight container and keep it in the refrigerator for up to a week.
